Super Simple Summer Smoothie

A quick little ditty for a Friday afternoon! With the necessity of avoiding the stove at all costs during these hot sticky days, lunch can still be something healthy, fruitful and filling all at once. Here’s a simple summer smoothie that is good for you AND delicious!

Super Simple Summer Smoothie (makes 2 – 16oz Smoothies)

2 Cups of Vanilla Coconut Milk

2 (heaping) TBSP of frozen or fresh raspberries

5-6 Cubes of Frozen Mango

5-6 Slices of Frozen Peaches (or fresh)

1 tsp of Ground Flax Seed

3 TBSP of Vanilla Protein Powder (Gluten Free)

1/4 tsp of Freshly Peeled Lemon Rind

1 1/2 TBSP of Organic Blue Agave

4 Leaves of Fresh Mint

Place all ingredients in the blender as listed in order above and blend on high for 30 seconds or until smooth.  Serve immediately!
